Winter Squash Instead of Pumpkin?Posted: January 22, 2011
I’m still in the process of trying to use up the winter squash we purchased at the farmers market last autumn. Sweet Meat is my favorite and it’s been showing up on our table in in all sorts of forms. Yesterday it was pie!
I used a recipe for Suzanne’s Old Fashioned Pumpkin Pie and substituted roasted, pureed Sweet Meat Squash for the pumpkin. The result was amazing! It set up just like pumpkin and was oh so yummy!
