One Muffin – Three Ways

I love a recipe that can be altered!  Ooops, I guess that’s all of them.  This muffin recipe was given to me by Charlotte, a confirmed chocoholic.  The original recipe is called, Best Chocolately Banana Muffins, and they are delicious!  But seeing a need for a more healthy version of the muffin mine is called, Mom’s Granola Banana Muffins.   Charlotte likes to make fun of me for that one.  The last version of the muffin was devised in desperation to rid myself of massive quantities of zucchini.  See if you can come up with your own version of this great muffin.

Best Chocolatey Banana Muffins

1/3 cup vegetable oil

1/2 cup sugar

1 egg

1 cup mashed bananas

1 cup chocolate chips

1 cup flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

1.  Heat oven to 350 degrees.

2.  In mixing bowl, whisk together oil, sugar, and egg; stir in mashed bananas and chocolate chips.

3.  Combine flour, baking soda, salt and cinnamon; stir into banana mixture, careful not to over stir.

4.  Spoon into 12 greased muffin cups.  Bake for 15-20 minutes.

Mom’s Granola Banana Muffins

1/3 cup vegetable oil

1/2 cup honey

1 egg

1 cup mashed bananas

1 cup dried cranberries

1/2 cup granola

1/2 cup chopped nuts

3/4 cup white flour

3/4 cup wheat flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

Follow mixing and baking instructions above.

Zucchini Coconut Muffins

1/3 cup vegetable oil

1/2 cup honey

1 egg

1 cup zucchini

1 cup shredded coconut

1/2 cup sliced almonds

1/2 cup wheat flour

3/4 cup white flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon coconut flavoring

Follow mixing and baking instructions above.

    I love various ways to use common ingredients and these muffins look delicious. I especially love the best chocolately banana muffins. I think I may have to make that tonight. Great post.
