Seven Pantry Friendly Dinners

I feel a little bit like Bilbo Baggins when I say, “I’ve put this off for far too long.”  Writing down a weeks worth of dinners, why is it so hard?

*Please note that I would normally add vegetables from the garden if possible and if I don’t have fresh garnishes it just won’t be as pretty.

Black Beans and Rice – Black beans, rice, and spices from closet pantry.  Green peppers, mangoes, and jalapenos from the freezer.

Mulligatawny Soup – All ingredients from the closet pantry.

Bean and Rice Sloppy Joes – All ingredients from closet pantry, except green peppers from the freezer.

Chicken Tortilla Soup – All ingredients from the closet pantry.

Pasta with Roasted Red Peppers – All ingredients from the closet pantry.

Chicken Pot Pie – All ingredients from the closet pantry.   (substitute baking powder biscuits for yogurt biscuits)

Bean and Rice Burritos – All ingredients from the closet pantry, except cheese from the freezer and whatever veggies you can find in the freezer or garden.

Next step — List all ingredients.

    Hey, when the seventh Monday or so rolls around, we could swap, just to switch things up. We’ll have your black beans and mango rice, and you can have our boxed macaroni and cheese!

    Lee Ann, you are the funny one . . . I’ll just make a double batch of black beans and invite you over. The kids are gone and so is the boxed mac and cheese.
