Best Ever Wheat Pancakes

There’s no need to wonder what to do with all the whole wheat in the food storage pantry again!  This awesome pancake recipe comes from my friend Carol.  If I didn’t already have whole wheat in the pantry, I would go get some just to make this recipe.  Get out your blender and make some pancakes . . .

Best Ever Wheat Pancakes

1 1/3 cup milk

1 heaping cup whole wheat (not flour)

3 1/2 teaspoons sugar

1/4 teaspoon salt

2 Tablespoons vegetable oil

1 teaspoon baking soda

2 teaspoons baking powder

2 eggs

1 teaspoon vanilla

Pour milk and wheat into a blender.  Blend for 4 minutes (if you have a Vitamix like blender, 45 seconds.) Add remining ingredients and blend.  Cook on a non-stick pancake griddle.

I used buttermilk, because I had some on hand and the pancakes were very light and tasty!
