Squash Oven Fries

Yes, another squash recipe and I’m sure you’ll keep seeing them here until the squash from last year’s garden is gone!  Just bear with me, I really do know how to cook other things.

Squash Oven Fries

Winter squash cut into thin strips, no more than 1/4″ thick (like a french fry)

Olive oil

Flour

Salt and Pepper to taste

Toss squash with very light coating of olive oil and then dust with flour.  Add salt and pepper to taste.  Arrange fries, making sure they are not touching each other, on a parchment lined baking sheet.  Bake for 15-20 minutes, turning fries about every 5 minutes.

A couple of tips to avoid soggy fries:

1.  Use a dry winter squash like sweet meat or a hubbard variety.

2.  Try cooking on a baking stone.

3.  Try baking at a slightly lower temperature for a longer time.

Roasted Red Pepper Dipping Sauce

1/2 cup sour cream

1 cup mayonaise

3 roasted red peppers

2 Tablespoons ground cumin

1 clove garlic

2 Tablespoons chopped cilantro

1 large jalapeno

1/4 teaspoon black pepper

Juice from one lime

1/2 teaspoon lime zest

Put all ingredients in a blender and blend until smooth.
